An exciting opportunity has arisen for a talented Arabic Chef de Cuisine / Sous Chef to join the Culinary team at Gallery21.

Located in the heart of the fashionable Adliya district, Gallery 21 provides the perfect excuse to indulge in art, food and urban leisure. Its contemporary design with total 2,600 square meters size with contemporary restaurant in natural sunlight.

It also has Genwa (Shisha) Lounge, Cigar Lounge, Rooftop Bar and an Art gallery.

JOB SUMMARY

Accountable for the quality, consistency and production of the restaurant kitchen. Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions. Coordinates menus, purchasing, staffing and food preparation for the property's restaurant. Works with team to improve guest and employee satisfaction while maintaining the operating budget. Must ensure sanitation and food standards are achieved.

This is a very "hands on" and demanding position so it is paramount that you work well in a team but are also able to set standards and lead by example at all times. You must be comfortable working under pressure.

CANDIDATE PROFILE

  • Must have 3-4 years relevant experience on the same position in preferred free standing restaurant
  • Knowledge of Arabic and Mediterranean cuisine
  • HACCP Certified
  • Demonstrated knowledge of current restaurant industry trends
  • Must possess culinary creativity
  • Innovative and creative Arabic Cuisine Experience
  • You will have strong written and verbal English skills as well able to communicate in Arabic is essential.

Your key duties will include:

  • Ensuring Culinary Standards and Responsibilities are met for Restaurant
  • Develops, designs, or creates new applications, ideas, relationships, systems, or products, including artistic contributions for restaurant.
  • Supervises restaurant kitchen shift operations and ensures compliance with all Food & Beverage policies, standards and procedures.
  • Maintains food preparation handling and correct storage standards.
  • Recognizes superior quality products, presentations and flavor.
  • Instructing on the correct usage of Kitchen equipment and machinery and to check that this is carried out in the correct manner by all Kitchen employees as set out by the Health & Safety regulations and correct them if necessary.
  • Purchase food and supplies from vendors approved by the company and monitor inventory
  • Identify new culinary techniques and presentations

Leading Kitchen Team

  • Planning rosters on a 2 weekly basis and to review on a daily basis, overtime, rosters and holiday requirements and absenteeism
  • Hire, train and supervise kitchen personnel
  • Leading by example and assist kitchen staff with food prep and recipe creation
  • Participates in training restaurant staff on menu items including ingredients, preparation methods and unique tastes
  • Identify new culinary techniques and presentations

Ensuring Exceptional Customer Service

  • Provides services that are above and beyond for customer satisfaction and retention.
  • Manages day-to-day operations, ensuring the quality, standards and meeting the expectations of the customers on a daily basis
  • Interacts with guests to obtain feedback on product quality and service levels.
